Sausage and Bean Ragout
A classic English sausage and bean ragout with large can Pinto or beans of choice, tomato purée, parsley. Hearty, comforting and proper.
Ingredients
- ½ large can Pinto or beans of choice
- 1 tspn tomato purée
- 1 tbspn oil
- 2 tspn parsley
- 100 gm onion (prepared weight)
- 1 tspn thyme
- ½ clove garlic
- 3 tbspn chopped tomatoes
- 2 sausages (depends on size)
- Salt & black pepper to taste

Chop sausages into thick pieces.

Finely chop the onion.

Chop the garlic.

Heat the oil in a frying pan and fry the onions, garlic and sausages until golden.

Stir in the tomato purée, chopped tomatoes, parsley and thyme.

Season to taste and bring to the boil.

Add the beans, cover and cook for , stirring occasionally, and adding water to prevent drying out.

Garnish with thyme and parsley and serve with naan bread or similar.
