  • 1 tbspn oil
  • 100 gm onion (prepared weight)
  • 1 tspn garlic (finely chopped)
  • 1 tspn ginger (finely grated)
  • 2 tbspn chopped tomatoes
  • 2 heaped tspn tomato purΓ©e
  • Β½ tspn turmeric
  • ΒΌ tspn ground coriander
  • ΒΌ tspn fenugreek powder
  • 1/8 tspn ground cumin
  • 1/8 tspn ground cinnamon
  • Β½ tspn salt

  • β†’Finely chop the onion
  • β†’Finely chop the garlic
  • β†’Finely grate the ginger

    Heat the oil in a wok or heavy pan over a medium heat and fry the onion, stirring regularly, for 3 min.

  2. 2

    Stir in the ginger and fry, stirring regularly, for 1 min.

    Stir in the garlic and fry, stirring regularly, for 1 min.

  4. 4

    Continue to fry until the ingredients turn golden brown but do not allow to burn.

    Transfer the mixture to a container, add the chopped tomatoes and some water and blend until smooth.

    Reheat the pan, add a little more oil if necessary, and stir fry the tomato purΓ©e over a low heat for about 1 min.

    Add the turmeric, coriander, fenugreek, cumin and cinnamon and fry, stirring for about 10 seconds.

    Add the blended onion mixture with the salt and 200 ml of hot water.

  9. 9

    Bring to the boil and simmer for 5 min, stirring regularly.

  10. 10

    Add water if needed to make 300 ml.

  • πŸ’‘The ingredients can easily be doubled to make 600 ml β€” it may take a little longer to fry the onions.
  • πŸ’‘Store in the fridge or freezer in a sealed container.
