Bulk Precooked Chicken
A takeaway-style bulk precooked chicken with that authentic BIR flavour. Uses a pre-made base sauce for speed without sacrificing taste.

- 1 tspn turmeric
- 100 gm onion (prepared weight)
- ½ tspn ground coriander
- 15 gm ginger (prepared weight)
- ½ tspn curry powder
- 15 gm garlic (prepared weight)
- ½ tspn chilli powder
- ½ tspn salt
- ½ tspn ground cumin
- ¼ tspn ground cinnamon
- 1 tbspn tomato purée
- 1000 gm (1 Kg) chicken breast

Chop the chicken breasts into approx 2.5 cm (1 inch) cubes.

Chop the onion into approx 1 cm cubes.

Grate the ginger.

Grate the garlic.

Mix the tomato purée with 2 tbspn of warm water.

Heat the oil in a large wok or stock pot and add the onion, ginger, garlic and salt, stir well and cook over a high heat, stirring regularly for about .

Add the spices and mix well.

Add the diluted tomato purée and stir well.

Add the chicken and thoroughly mix to coat with the spiced onions.

Add 200 ml of hot water, mix well and simmer for , stirring regularly and adding a little hot water if necessary to prevent drying (probably unnecessary).

Remove from the heat and allow to cool.

Strain the chicken to remove as much liquid as possible.

Unless using the chicken immediately it can be frozen by putting each piece of cooled cooked chicken on a plate with each piece separated and then putting the plate into a freezer. When frozen the chicken cubes can be placed into a freezer bag and returned to the freezer.
