Bacon Po Boy
A classic English bacon po boy with French Bread Stick, mayonnaise, tomato ketchup. Hearty, comforting and proper.
Ingredients
- 1/3 French Bread Stick
- 2 tbspn mayonnaise
- butter (or veg spread) as needed
- 1 tbspn tomato ketchup
- 1 tspn dijon mustard
- 10 gm (approx) of spring onion
- 1 tomato (3 slices)
- 1 tspn tabasco sauce (or hot sauce of choice)
- 1 little gem lettuce (3 leaves)
- ΒΌ tspn salt
- 2 rashers of bacon of choice
- cheddar cheese (as required)
- pecorino romano cheese (as required) (see note 1)
Method

Grill the bacon rashers as you like them - well done is good.

Finely chop the spring onions.

In a small bowl mix together the mayonnaise, tomato ketchup, spring onion, hot sauce and salt, cover with cling film and set aside in fridge until using.

Slice the french bread stick lengthwise, leaving a 'hinge'.

Spread the bread with butter of veg spread.

Spread the dijon mustard over one side of the bread.

Place the tomato slices on top of the mustard.

Flatten the 3 little gem lettuce leaves and place over the tomato slices.

Spread the mayonnaise sauce, to taste, over the lettuce leaves.

Top the mayonnaise with the grilled bacon rashers.

Grate some cheddar cheese, to taste, over the bacon rashers.

Grate some pecorino romano, to taste, cheese over the cheddar.
