Vegetable and Bacon Fry
A classic English vegetable and bacon fry with potatoes (see note 1), baby corn, beans. Hearty, comforting and proper.
Ingredients
- 1 - 2 tbspn oil
- ¼ tspn salt
- 300 gm potatoes (see note 1)
- 40 gm baby corn
- 100 gm onion (prepared weight)
- 20 gm beans
- 50 gm carrot (prepared weight) (1)
- 40 gm sugar snap peas or mange tout
- 50 gm red pepper (prepared weight)
- 40 gm baby carrot (2) (see note 3)
- 3 or 4 rasher's bacon (see note 2)
- 75 gm mushrooms

Peel and cut the potatoes (see note 1) into approx ¼ - ½ inch slices, then add to boiling, salted, water and boil for , then drain and set aside on kitchen paper and dust with salt.

Chop the onion.

Chop the carrot (1).

Chop the red pepper.

Sauce: Put the onion, carrot (1) and red pepper into a blender with a little water and blend to a smooth paste, adding water as needed, then stir in salt.

Grill the bacon to suit your taste and set aside on kitchen paper and when cool break into pieces.

Chop the baby corn, beans, peas and carrot (2) into similar sized pieces.

Roughly chop the mushrooms.
