Tuna and Frankfurter Po Boy
Traditional British tuna and frankfurter po boy featuring French stick. Simple ingredients, great results.
Ingredients
- 1/3 French stick
- 1 little gem lettuce (3 leaves)
- butter (or veg spread) as needed
- 2 frankfurter sausages
- 1 tspn Dijon mustard
- BBQ sauce to taste
- 56 gm tinned tuna (in spring water)
- Pecorino Romano cheese (see note 1)
Method

Cook the frankfurter sausages as outlined on the packet (I microwave mine for about ).

Slice the bread almost in half, leaving a 'hinge'.

'Butter' both halves of the bread.

Spread the Dijon mustard over one half of the bread.

'Spread' the tuna onto one half of the bread.

Drizzle BBQ sauce to taste over the tuna.

Flatten 3 lettuce leaves and place over the tuna and sauce.

Slice the frankfurters in half, lengthways, and place on top of the lettuce.

Add more BBQ sauce to taste.

Grate the pecorino cheese over the frankfurters to suit individual taste (I like a lot).
