Chicken Chop Suey
A quick Chinese chicken chop suey with pineapple juice, chicken breast, celery. Ready in under 30 minutes.
Ingredients
- 1 tbspn oil
- 100 ml pineapple juice
- 1 chicken breast
- Pineapple chunks to taste
- 75 gm celery
- 2 spring onions
- ½ green pepper
- 1 tbspn soy sauce
- 6 button mushrooms
- 50 gm sugar snap pea pods
- 1 vegetable stock cube
- ½ tspn ground ginger
- 1 tomato
- ½ tspn horseradish sauce
- Handful of bean sprouts and a few water chestnuts (optional)

Cube the chicken breast.

Slice the celery stalk into small strips.

Deseed and slice the green pepper.

Slice the mushrooms.

Crush the stock cube.

Slice the spring onions.

Cut the sugar snap peas in half.

Chop the tomato into 8 to 12 pieces depending on size.

Heat the oil in a wok or a heavy pan.

Add the chicken and fry for to seal.

Add the crushed stock cube, pineapple juice, soy sauce, ginger, horseradish sauce, celery and green pepper.
