Baked Potatoes with Tomatoes
Vegetarian baked potatoes with tomatoes made with cheese. Hearty enough to keep you full.
Ingredients
- As required olive oil
- 50 gm cheese
- ยฝ large onion
- salt and freshly ground black pepper
- 1 large potato
- 50 ml water
- 3 tomatoes
Method

Preheat the oven to 180ยฐ C.

Thinly slice the onion.

Peel and thinly slice the potato.

Thinly slice the tomatoes.

Grate the cheese.

Grease an oven dish.

(it is difficult to give precise quantities as it will depend on the size of the oven dish, just use whatever is needed to make the layers).

Arrange a layer of onions in the oven dish.

Add a layer of potatoes.

Add a layer of tomatoes.

Drizzle some olive oil over the tomatoes and sprinkle with ยฝ of the cheese, then add seasoning.

Add another layer of onions.

Add a top layer of overlapping potatoes and tomatoes.

Sprinkle the top with the remaining cheese and drizzle with olive oil.

Finally add the water and add seasoning to the top.
