Aubergine and Tomato Bake
Vegetarian aubergine and tomato bake made with medium aubergine. Hearty enough to keep you full.
Ingredients
- 3 tbspn olive oil
- 200 gm chopped tomatoes
- 1 medium aubergine
- 75 gm soft cheese with garlic and herbs
- 100 gm onion (prepared weight)
- 1 slice bread
- salt to taste

Remove the stalk from the aubergine and cut into approx 1 cm rounds.

Chop the onion.

Crumb the slice of bread.

Butter an ovenproof dish.

Preheat a grill to high.
