Smoked BBQ Ribs
Oven-baked pork ribs with a dry rub, slow-cooked until fall-off-the-bone tender, then glazed in sticky BBQ sauce.
Ingredients
- 400 gm pork spare ribs or baby back ribs (1 rack)
- 1 tspn salt
- 1 tspn smoked paprika
- ½ tspn garlic powder
- ½ tspn onion powder
- ½ tspn black pepper
- ½ tspn brown sugar
- Pinch of cayenne
- 4 tbspn BBQ sauce (shop-bought or homemade)

Remove the membrane from the back of the ribs by sliding a knife under it and pulling it off.

Mix the dry rub and pat all over the ribs.

Wrap in foil and refrigerate for at least (overnight is better).

Place the foil-wrapped ribs in a roasting tin. Bake at 150C for .

Unwrap, brush generously with BBQ sauce.

Return to the oven at 200C unwrapped for 20–, brushing with more sauce every .

Rest for before cutting between the bones.
Notes
- Removing the membrane (silverskin) from the back lets the seasoning penetrate.
- The low, slow wrapped cook is what makes them fall off the bone.
- Serve with coleslaw, corn on the cob and chips.
