  • 2 - 3 tbspn oil
  • ½ tspn black pepper
  • 60 gm onion (prepared weight)
  • 1 x 220 gm tin butter beans
  • 2 garlic cloves (10 gm)
  • 2 - 3 tspn dried oregano to taste
  • 1 tspn paprika
  • 1 veg stock cube
  • 1 x 230 gm tin chopped tomato
  • water as required
  • 1 tspn tomato purée

Method

    Chop the onion.

    Chop the garlic.

  3. 3

    Drain and wash the butter beans.

  4. 4

    Heat the oil in a suitable saucepan over a low heat, add the onion and garlic and fry, stirring regularly, for .

    Stir in the paprika.

  6. 6

    Add the chopped tomato, tomato purée, black pepper, butter beans, oregano and crush in the stock cube.

    Stir well and add a little water as required.

    Cook covered, stirring regularly, for 20 - , adding a little water as required to prevent drying.

    Serve with a bread roll, flavoured flatbread or other bread of choice.
