Greek Gigantes Plaki
The national dish of Greece — greek gigantes plaki. Made with paprika, veg stock cube, tomato purée.
Ingredients
- 2 - 3 tbspn oil
- ½ tspn black pepper
- 60 gm onion (prepared weight)
- 1 x 220 gm tin butter beans
- 2 garlic cloves (10 gm)
- 2 - 3 tspn dried oregano to taste
- 1 tspn paprika
- 1 veg stock cube
- 1 x 230 gm tin chopped tomato
- water as required
- 1 tspn tomato purée

Chop the onion.

Chop the garlic.

Drain and wash the butter beans.

Heat the oil in a suitable saucepan over a low heat, add the onion and garlic and fry, stirring regularly, for .

Stir in the paprika.

Add the chopped tomato, tomato purée, black pepper, butter beans, oregano and crush in the stock cube.

Stir well and add a little water as required.

Cook covered, stirring regularly, for 20 - , adding a little water as required to prevent drying.

Serve with a bread roll, flavoured flatbread or other bread of choice.
