Chipotle Chicken

Ingredients

- 2 - 3 tbspn oil
- 5 gm garlic
- 1 chicken breast
- 1 portion chipotle sauce (see note 1)
- salt as required
- 1 chicken stock cube (low salt is ok)
- black pepper as required
- 1 tbspn creamed cheese (see note 2)
- 50 gm onion (prepared weight)
- 1 tbspn greek yogurt (see note 3)
Method

Chop the onions.

Finely chop the garlic.

Season the upper side of the chicken breast with salt and pepper.

Heat the oil in a non-stick frying pan (or flame resistant casserole), over a low/medium heat, and fry the chicken breast seasoned-side-down for about until browned,

Season the upper side of the chicken as before, flip over and continue to fry for another , then remove from the pan and set aside.

Add a little more oil as needed and fry the onion, stirring regularly, for .

Add the garlic and chipotle sauce and cook, stirring for .

Add a little hot water, crush in the chicken stock cube and stir in the creamed cheese until it melts.

Return the chicken to the pan and add a little more hot water and cook, covered, stirring regularly, for , until the chicken is thoroughly cooked, adding hot water as required to maintain the desired sauce consistency and to prevent drying and burning.

Remove from the heat, stir in the yogurt, and season to taste.
