Ingredients

- 50 ml dry sherry
- ¼ onion (75 gm prepared weight)
- ½ chicken stock cube
- 2 button mushrooms
- 3 tbspn double cream
- 1 clove garlic
- 2 tspn parsley
- 40 gm prosciutto (spiced ham)
- 1 tbspn passata
- 40 gm salami (cured sausage)
- 2 tbspn chopped tomatoes
- 1 chicken breast
- ½ tspn basil
- 25 gm plain flour
- ¼ tspn oregano
- Freshly ground black pepper
- 10 gm butter (2)

Chop the onion.

Thinly slice the mushrooms.

Chop the garlic.

Thinly slice the prosciutto and cut into strips.

Thinly slice salami and cut into strips.

Butterfly the chicken breast.

Dredge the chicken in flour.

Melt butter (1) in saucepan over a medium heat.
