Buffalo Chicken Wings

  • 6 chicken wings, tips removed, split at the joint
  • 1 tspn baking powder
  • Salt and pepper
  • 3 tbspn hot sauce (Frank's RedHot or similar)
  • 30 gm butter, melted
  • 1 tspn garlic powder
  • Blue cheese or ranch dressing to serve
  • Celery sticks to serve

Method

    Pat the wings completely dry with kitchen paper.

    Toss with baking powder, salt and pepper.

  3. 3

    Arrange on a wire rack over a baking tray.

  4. 4

    Bake at 220C for , flipping halfway, until very crispy.

    Make the buffalo sauce: mix the hot sauce, melted butter and garlic powder.

    Toss the hot wings in the buffalo sauce until well coated.

  7. 7

    Serve immediately with blue cheese or ranch dressing and celery sticks.

Notes

  • The baking powder is the secret to super-crispy skin in the oven — do not skip it.
  • Pat the wings completely dry — moisture is the enemy of crispiness.
  • Adjust the butter ratio for milder or hotter wings.
