Basque Chicken
Spain inspired basque chicken featuring chicken breast. A world classic for one.
Ingredients
- 1 chicken breast
- 1 tspn tomato purée
- 10 gm butter
- 80 ml dry cider
- 2 rashers of bacon (smoked is ok)
- 1 chicken stock cube
- 125 gm onion (prepared weight)
- 1 clove garlic
- ½ red pepper
- 1 tspn dried rosemary
- 1 tomato
- Freshly ground black pepper
Method

Finely chop the onion.

Finely chop the garlic.

Deseed and slice the red pepper.

Chop the tomato.

Chop the bacon.

Melt the butter in a flame proof casserole and cook ½ of the bacon until it begins to crisp.

Add the chicken and onion and cook for , turning the chicken a few times.

Add the remaining bacon and continue to cook for .

Add the garlic and tomato purée and cook for .

Add the cider, red pepper, stock cube, rosemary and season with pepper, bring to a boil and simmer, covered, for .

(During the cooking add a little water, if needed, to prevent drying out).
