Vegetable Pathia
A traditional Indian vegetable pathia with Ingredients Continued, ginger, green chilli. Cooked from scratch with authentic spices.

- 2 tbspn oil
- 2 tbspn chopped tomatoes
- 150gm of onion
- 1 tspn sugar
- 1 tspn ginger
- ¼ tspn salt
- 1 tspn green chilli
- ½ tspn turmeric
- 2 cloves garlic
- ½ tspn paprika
- 1 tspn medium curry powder
- 1 tbspn lemon juice
- ½ tspn hot chilli powder
- 6-8 button mushrooms (depends on size)
- ¼ tspn fenugreek powder
- 1 tbspn tomato purée

Slice 100gm of the onion.

Finely chop 50gm of the onion.

Finely chop the ginger.

Finely chop the garlic.

Finely chop the green chilli.

Slice the mushrooms into 3 pieces and chop these into 2 parts each (not critical).

Heat a wok and add the oil.

Add the curry powder, fenugreek and chilli powder and stir fry for a few seconds.

Add the sliced onions and stir well; lower the heat and cook for .

Add tomato purée and stir fry for .

Add ½ of the garlic and stir fry for a few seconds.

Add the chopped onion, green chilli, ginger, rest of garlic and fry for .

Add the chopped tomatoes, turmeric and paprika and stir fry for a few seconds.

Add 150ml water, sugar and salt and simmer for .

Add mushrooms, stir well, and simmer for . (Add water as necessary to maintain a tomato ketchup consistency for the sauce.)
