Rock Cakes
Homemade rock cakes featuring Makes 8. Simple to make and deeply satisfying.
Ingredients

- 200 gm self raising flour
- 100 gm caster sugar
- 1 pinch salt
- 100 gm sultanas
- 75 gm stork margarine
- 1 medium egg
- 2 tbspn milk
Method

Preheat the oven to 200° C.

Lightly flour a baking tray.

Sieve the flour and salt into a large mixing bowl.

Cut the margarine (striaight from the fridge) into small cubes and add to the flour.

Rub the margarine into the flour until it resembles fine breadcrumbs.

Stir in the sugar with a metal spoon.

Stir in the sultanas.

In another bowl, mix the egg and the milk.

Add the egg and milk to the flour and mix together with a fork until the mixture is stiff.

(It should look rough and lumpy).

Place 8 tablespoon sized portions of mixture onto the baking tray (leave them rough and lumpy).
