Punjabi Spice Mix
A takeaway-style punjabi spice mix with that authentic BIR flavour. Uses a pre-made base sauce for speed without sacrificing taste.

100 ml oil ยท 750 gm onions (prepared weight) ยท 1 tspn salt ยท 1 tbspn turmeric ยท 1 tspn ground coriander ยท ยฝ tspn ground cumin ยท +8 more
Ingredients
- Makes approx 20 ml
- 1 tspn cardamom seeds
- ยฝ tspn ground cinnamon
- 1 tspn cloves
- ยฝ tspn black peppercorns
- ยพ tspn cumin seeds
- 1/8 tspn nutmeg
Method

Remove the seeds from sufficient cardamom pods to make 1 tspn.

Grind the cardamom seeds, cloves, cumin seeds and peppercorns to a powder in a pestle and mortar.

In a small bowl mix all the ingredients together.

Store in an airtight container in a cool and dark place.
