Lamb Rogan Josh
Authentic Indian lamb rogan josh made the traditional way — no shortcuts, just proper home-cooked flavour.
Ingredients
- 1 portion lamb
- 1 tbspn oil
- 1 tbspn lemon juice
- ¼ tspn cumin seeds
- ¼ tspn salt
- 1 bay leaf
- ½ clove garlic
- 2 large or 5 small cardamom pods
- 1 tspn ginger
- 75 gm onion (prepared weight)
- 80 ml yogurt
- 1 tspn coriander seeds
- 1 tspn cumin powder
- ½ tspn hot chilli powder
- ½ clove garlic
- 3 tbspn chopped tomatoes
- 2 tspn tomato purée

Crush the garlic for the marinade.

Grate the ginger for the marinade.

Cube the lamb.

In a small bowl mix the yogurt, lamb, lemon juice, salt, garlic and ginger, cover and marinade in the fridge for about .

De-seed the cardamom pods and lightly crush the seeds.

Finely chop the onion.

Grind the coriander seeds to a powder in a pestle and mortar.

Heat the oil in a flame proof casserole and fry the cumin seeds for .
