Chicken Passanda
Authentic Indian chicken passanda made the traditional way β no shortcuts, just proper home-cooked flavour.
Ingredients
- 1 chicken breast
- 1 tspn coriander seeds
- 2 tbspn oil
- 2 tbspn Greek yogurt
- 100 gm onion (prepared weight)
- 1 tspn tomato purΓ©e
- ΒΌ tspn cinnamon
- 2 tbspn passata
- 8 cardamom pods
- Β½ tspn salt
- 1 tspn ginger
- 2 tbspn flaked almonds
- 1 clove garlic
- 45 gm creamed coconut
- Β½ tspn turmeric
- 125 ml water
- Β½ tspn hot chilli powder
Method

Finely chop the onion.

Finely chop the ginger and garlic.

Grind the coriander seeds to a powder in a pestle and mortar.

De-seed the cardamom pods and grind to a powder in a pestle and mortar.

Cube the chicken breast.

Grate the creamed coconut and dissolve in 50 ml of hot water.

Dry roast the flaked almonds until they turn slightly brown β do not burn.

Fry the chicken in a little oil for until cooked. Remove from pan and reserve.
