  • 1 chicken breast
  • 1 tspn coriander seeds
  • 2 tbspn oil
  • 2 tbspn Greek yogurt
  • 100 gm onion (prepared weight)
  • 1 tspn tomato purΓ©e
  • ΒΌ tspn cinnamon
  • 2 tbspn passata
  • 8 cardamom pods
  • Β½ tspn salt
  • 1 tspn ginger
  • 2 tbspn flaked almonds
  • 1 clove garlic
  • 45 gm creamed coconut
  • Β½ tspn turmeric
  • 125 ml water
  • Β½ tspn hot chilli powder

Method

    Finely chop the onion.

  2. 2

    Finely chop the ginger and garlic.

  3. 3

    Grind the coriander seeds to a powder in a pestle and mortar.

  4. 4

    De-seed the cardamom pods and grind to a powder in a pestle and mortar.

  5. 5

    Cube the chicken breast.

  6. 6

    Grate the creamed coconut and dissolve in 50 ml of hot water.

  7. 7

    Dry roast the flaked almonds until they turn slightly brown – do not burn.

  8. 8

    Fry the chicken in a little oil for until cooked. Remove from pan and reserve.
