Tiramisu
Italy inspired tiramisu featuring For 1 large or 2 small. A world classic for one.
Ingredients
- For 1 large or 2 small
- 1 mug of strong coffee
- 1 tspn vanilla extract
- 120 ml double cream
- 1 tbspn spirit (optional - see note 1)
- 80 gm mascarpone
- 5 or 6 sponge fingers / lady fingers
- 2 tspn caster sugar
- as required cocoa powder
Method

Make a mug of black coffee using 4 heaped tspn of coffee powder/granules and allow to cool.

Mix the cream. mascarpone, sugar, vanilla and optionally the spirit.

Soak sponge fingers, one at a time, in the coffee and place in the bottom of your desired serving glass/bowl (you may need to break them to fit) and continue until the bottom of the serving glass/bowl is covered, then drizzle a little more coffee over the sponge fingers.

Spread half of the cream mixture over the sponge layer.

Repeat the process with another layer of sponge fingers followed by cream.

Cover the top with a dusting of cocoa powder (a tea strainer is good for this).
