Eintopf
A thick, hearty German one-pot stew with sausage, potatoes, beans and vegetables — the ultimate cold weather meal.
Ingredients
- 1 smoked sausage (about 100 gm), sliced
- 1 small onion, diced
- 1 clove garlic, crushed
- 1 carrot, diced
- 1 medium potato, peeled and cubed
- 1 small leek, sliced
- 100 gm tinned haricot or cannellini beans, drained
- 400 ml chicken or vegetable stock
- 1 tbspn tomato purée
- 1 bay leaf
- ½ tspn paprika
- 1 tbspn vegetable oil
- Salt and pepper
- Fresh parsley, to serve

Heat the oil in a saucepan and fry the onion and carrot for until softened.

Add the garlic, paprika and tomato purée and cook for .

Add the potato, stock, bay leaf and the sliced sausage.

Bring to a simmer, cover, and cook for until the potato is tender.

Add the leek and beans and cook for a further .

Remove the bay leaf, season with salt and pepper, and serve with parsley on top.
Notes
- Eintopf literally means 'one pot' — use whatever vegetables you have.
- Any smoked sausage works — German Bockwurst, Polish kielbasa, or Spanish chorizo.
- This gets better overnight — make it ahead if you can.
